Chicken Risotto

Method

  1. Cut chicken into 1 inch cubes place in a bowl
  2. add salt, oregano, pepper and garlic.
  3. Squeeze lemon over mix well until meat is coated with herbs and lemon juice
  4. heat olive oil and sugar in a thick saucepan,stirring.
  5. Add chicken and a cup of water and cover.
  6. Cook for 20 minutes.
  7. Add oniosn and peppers
  8. Add rice and paprika and stir well
  9. Add enough water to cover everything add a teaspoon salt.
  10. Cover and cook for 15 minutes with lid on..
  11. Take lid off, stir, replace lid and turn off heat.
  12. Let stand for about 5 minutes before serving.

Ingredients

  • 400 gms chicken breast
  • tsp oregano
  • tsp salt
  • half tsp black pepper
  • small clove garlic crushed
  • 1 lemon
  • 2 tbs olive oil
  • 1 tsp sugar.
  • small onion - diced
  • half a red and half a green pepper - diced
  • 2 scallions or spring onions - chopped
  • 2 cups arborio rice
  • 1 tsp paprika
