Method
- Cut chicken into 1 inch cubes place in a bowl
- add salt, oregano, pepper and garlic.
- Squeeze lemon over mix well until meat is coated with herbs and lemon juice
- heat olive oil and sugar in a thick saucepan,stirring.
- Add chicken and a cup of water and cover.
- Cook for 20 minutes.
- Add oniosn and peppers
- Add rice and paprika and stir well
- Add enough water to cover everything add a teaspoon salt.
- Cover and cook for 15 minutes with lid on..
- Take lid off, stir, replace lid and turn off heat.
- Let stand for about 5 minutes before serving.

- 400 gms chicken breast
- tsp oregano

- half tsp black pepper
- small clove garlic crushed
- 1 lemon
- 2 tbs olive oil
- 1 tsp sugar.
- small onion - diced
- half a red and half a green pepper - diced
- 2 scallions or spring onions - chopped
- 2 cups arborio rice
- 1 tsp paprika
