Method
- Pre-heat your oven to gas mark 4 / 175c
- Grease medium sized baking dish
- Add onion, bell pepper and herbs and sauté until vegetables are tender, about 10 minutes.
- Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes.
- Arrange fish in prepared dish. Pour sauce over. Sprinkle cheese on top
- Bake until fish is cooked through and top is golden, about 25 minutes.

- 2 haddock fillets (or cod etc.)
- 200 gms grated mozarella or cheddar
- 50 grams of butter
- 1 green pepper, chopped
- 1 tsp dried basil
- 1 tsp dried oregano
