Italian Baked Haddock

Method

  1. Pre-heat your oven to gas mark 4 / 175c
  2. Grease medium sized baking dish
  3. Add onion, bell pepper and herbs and sauté until vegetables are tender, about 10 minutes.
  4. Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes.
  5. Arrange fish in prepared dish. Pour sauce over. Sprinkle cheese on top
  6. Bake until fish is cooked through and top is golden, about 25 minutes.

Ingredients

  • 2 haddock fillets (or cod etc.)
  • 200 gms grated mozarella or cheddar
  • 50 grams of butter
  • 1 green pepper, chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
