Apple Doughnuts with Cinnamon (Apfelküchle)

Method

  1. Sift the flour, sugar, salt and baking powder into a large bowl.
  2. Stir in the milk, mix with a handheld whisk to form a smooth dough.
  3. Add egg and cinnamon, and stir into a smooth batter
  4. Let the batter rest a bit while preparing the apples.
  5. Peel and core the apples.
  6. Then cut into slices about 2 cm thick.
  7. Drizzle a little lemon juice on the apples so they don't turn brown
  8. Place the oil in a heavy frying pan to about 2cm depth
  9. Heat oil on medium heat to about 180 C
  10. Dip an apple slice into dusting flour, then batter the rings using two forks to move them in the batter and then carefully place them in the hot oil.
  11. Fry for about 2or 3 minutes on both sides until golden brown.
  12. Process the remaining apple slices in the same way.
  13. Place the finished slices on kitchen paper to drain
  14. Make a mixture of sugar and cinnamon and roll the apple slices in the cinnamon sugar while they are still hot
  15. Traditionally served with vanilla ice cream or vanilla sauce or light pouring custard

Ingredients

  • 100 g Plain Flour ( plus more for dusting)
  • 1 tsp Baking powder
  • pinch of Salt
  • 60 ml Milk
  • 1 Egg
  • 2 tart apples
  • 1 TSP Lemon juice
  • 2 TBSP Sugar
  • ½ TSP Cinnamon powder
  • oil for cooking
  • sugar and cinnamon for serving
