Method
- 1. Preheat the oven to 180C/Gas mark 5.
- 2 Slice chicken lengthways to make a pocket for stuffing.(Don’t cut all the way through)
- 3. Core and chop apple into small cubes.
- 4. In a bowl, crumble the blackpudding and combine with apple cubes and sage.
- 5. Stuff this mixture into chicken breasts. Don’t overfill as it will expand while cooking.
- 6. Once all the chicken is stuffed, wrap the bacon around the chicken and place on a greased oven tray.
- 7. Roast in the oven for 30 to 40 minutes until the chicken is cooked through.
- 8. Remove and allow to cool slightly before serving

- 280g black pudding
- 1 red apple (peeled)
- Teaspoon of sage
