Black Pudding and Apple Stuffed Chicken Breast

Method

  1. 1. Preheat the oven to 180C/Gas mark 5.
  2. 2 Slice chicken lengthways to make a pocket for stuffing.(Don’t cut all the way through)
  3. 3. Core and chop apple into small cubes.
  4. 4. In a bowl, crumble the blackpudding and combine with apple cubes and sage.
  5. 5. Stuff this mixture into chicken breasts. Don’t overfill as it will expand while cooking.
  6. 6. Once all the chicken is stuffed, wrap the bacon around the chicken and place on a greased oven tray.
  7. 7. Roast in the oven for 30 to 40 minutes until the chicken is cooked through.
  8. 8. Remove and allow to cool slightly before serving

  • 4 chicken breasts
  • 200g streaky bacon rashers
  • 280g black pudding
  • 1 red apple (peeled)
  • Teaspoon of sage
